Bistro Guillaume is poised to open on George Street in the city. The more modestly priced second Sydney restaurant from one of our most celebrated fine-dining chefs is the latest big signing in the CBD. "I would love to have a bistro in the city, but I can't confirm anything. I've signed a confidentiality agreement," chef Guillaume Brahimi says.
Good Food's sources insist the chef is headed to a site on the western side of George Street, in the heart of the banker belt between Jamison and Grosvenor streets. Brahimi, who opened the upmarket Guillaume in Paddington after a long and successful run at Bennelong restaurant, launched Bistro Guillaume in Melbourne and Perth, but has long wanted to open the bistro in his adopted hometown. Double Bay was seriously looked at, but the chef says the "busy" city environment is a perfect fit.
The CBD is proving a strong lure for many of our top-line chefs and food operators. Mark Best opened Pei Modern at the Four Seasons, former Nomad chef Nathan Sasi is also opening on George Street at Mercado. The team from The Grounds of Alexandria has announced it will open a spin-off at The Galeries, opposite QVB.
